Hello Happy People!
This is part 2 of my birthday chronicles and since it was on Father's day weekend, I spend last Sunday with my family on a beautiful place called Guavate. The evening was filled with laughter and lots of food. We walk around to see the artesanias and we ended up taking some photos next to this beautiful river.

Also since it was my birthday I wore this awesome neon skater dress, which I made. And now is a part of my S/S DIY project.

Hello happy people!
Yesterday was a very special day for me since it was my birthday!!! Whooo hooo!! So my day consisted on doing a little shopping with my mom, ate some delicious cupcakes from Vanilla Bean Cupcakery, yummy yummy, and then watched the movie Safe House. Not much, since I don't like to celebrate birthdays. 

I also added a new piece to my S/S DIY project. When I saw this gorgeous fabric, I knew that it was meant for me. And since it's perfect for this season I decided to make a pastel skater dress but the top part didn't turn out that good so I cut it and turn it into a a asymmetrical skirt. It is shorter on the sides and longer on the back and front.

I will be posting part 2 of my birthday weekend tomorrow. Hope you guys had an amazing father's day weekend!

Food Fridays! Chicken Pan Pie Reverse




Hello happy people!
At my home, I'm the one who cooks from Monday thru Friday. This week I decided to make something different than the usual rice with beans and chicken. I went thru my Food Pinterest Board and found this recipe so I decided to give it a try. It turn out very delicious and I only changed one thing which was that instead of using pie crust dough, I used flour tortillas and instead of baking them (which was way more healthier) I fried them and made a little chicken pizza. That's why I named it Chicken Pan pie Reverse, lol I know, I'm very clever (facepalm) Anyway I hope you guys like it as much as me! Enjoy.

Ingredients

  • 4 6-ounce pieces boneless, skinless chicken breasts, about 1 1/2 pounds
  • 1 small onion, quartered with root attached
  • 1 large fresh bay leaf
  • 1 carrot, peeled and quartered
  • 2 small ribs celery, coarsely chopped
  • A few sprigs of parsley
  • Sea salt
  • 1 prepared piecrust dough
  • Flour, for dusting
  • 2 tablespoons poppy seeds
  • Zest and juice of 1 lemon
  • Egg wash
  • 1 tablespoon EVOO – Extra Virgin Olive Oil
  • 3 tablespoons butter
  • 3 medium leeks, halved, sliced 1/2-inches thick
  • 2 to 3 large cloves garlic, thinly sliced
  • Pepper
  • 3 tablespoons flour
  • 1/2 cup dry white wine
  • 1 1/2 cups chicken stock/poaching liquid
  • 1/3 cup heavy cream
  • A few grates of nutmeg
  • 1 round tablespoon Dijon mustard
  • 3 to 4 tablespoons fresh tarragon, chopped
  • 1 cup shelled fresh peas or 1 cup defrosted
  • 1 small onion, quartered with root attached 

Preparation

Preheat oven to 400°F.
Place chicken in a skillet; add onion, bay leaf, carrot, celery and parsley. Season with salt, add water to cover chicken and bring to a boil. Reduce heat to low and simmer gently 15-20 minutes, depending on size of chicken breasts.
Meanwhile, place dough on a floured surface. Sprinkle with poppy seeds, lemon zest and salt. Flour a rolling pin and gently roll toppings into dough. Using a pizza cutter or sharp knife, cut dough into 8 wedges; arrange on a nonstick or parchment-lined baking sheet and brush with egg wash. Bake to golden, 15-20 minutes.
Place the chicken on a plate to cool and strain the poaching liquid. Return the skillet to stove and heat EVOO, 1 turn of the pan, over medium heat. Add leeks and garlic, and season with salt and pepper. Cook to soften, 5-6 minutes, add flour and stir 1 minute. Add wine and reduce to evaporate; add stock, cream and nutmeg, and bring to bubble. Add Dijon and let thicken. Chop or shred the chicken; add the peas, tarragon, chicken and lemon juice to the sauce and stir to warm through. Remove from heat and arrange the pie wedges on top. Serve from skillet into shallow bowls, removing filling and 1 wedge of crust per portion.

Hello happy people!
I just finished reading the book The Maze Runner and I'm so freaking confuse but glad I started reading this book. It was amazing and filled with lots of action pack moments. Now I'm waiting impatiently for the second book to arrive. I also finished watching season 3 of The Office, I've been watching this show nonstop since I discover it last month and I regret nothing! Lol

So I decided to start a little challenge for this spring/summer. Like everybody knows I'm poor lol, so I decided to do a list of S/S clothing items that I would really want to have and then I'm giving myself a week to make each one or two. I'm going to called it S/S DIY. So I'm officially announcing it here so that way I force myself to do this. Last week I made this bright pink circle skirt which I've been wanting for a long time and paired it with this lovely crochet top from Forever 21. Hope you guys enjoy this new project.

Hello happy people!
I got so much to say, so here it goes: 
Yesterday I went to the church to celebrate Holy Week. Later that day I visited my grandma and her family. i ate a lot of paella and watched the movie The Adventures of TinTin, which got me amazed by how real the cartoons looked. My grandma even said: "but why the dog looks like a cartoon?", which was hilarious because she thought she was watching an action live movie. And also it was very fun to watch it with her because she laughs a lot which makes it more enjoyable for me. =) So this was my yesterday's outfit where I wore a beautiful blouse from Lulu*s. I bought it with a gift card I won from the Top Fan contest at Lulu’s facebook. And a Forever21 skirt and whistle necklace.

I'm also joining the 2012 50 books challenge, but I'm going to read only 25. So, so far I read: 90 Minutes in Heaven by Don Piper and Confessions of a Shopaholic by Sophie Kinsella. And I started to read The Maze Runner by James Dashner. And so far it's been very entertaining.

Ps. I thinking on maybe switching from blogger to Tumblr. It's better, easier and I could get more followers there. I don't know. What do you guys think I should do?

Last Sunday I helped my brother build his new house. Yep, you read it right, I was mixing cement and moving some blocks, because I'm strong like that, lol! And yes I was wearing this dress but I was very careful and I didn't got it dirty.

And is there any of you a Pretty Little Liars fan? Did you guys saw last night epic episode? It was one of the most scariest but awesome episode yet! *Spoiler alert* I don't think Mona is A. She even said it herself, I think that there is a group of people who are A's little helper and Mona was one of them. And I think that Melissa and Jenna are also a part of the A team. So what do you guys think?

Hola gente alegre!
El domingo pasado estuve ayudando a mi hermano a construir su nueva casa. Si, leyeron bien, yo estaba mezclando cemento y moviendo bloques, porque asi de fuerte soy, lol! Y si tenia este traje puesto pero fui super cuidadosa así que no lo ensucié.

Y ¿alguna de ustedes es fan de Pretty Little Liars? ¿Vieron el episodio de ayer? Para mi fue uno de los episodios más espantosos pero brutales de esta temporada. *Spoiler alert* Yo no creo que Mona sea A. Ella misma lo dijo, yo creo que hay un grupo de personas que son los ayudantes de A y Mona es una de ellas. Y creo que Melissa y Jenna son parte del A team. Asi que ¿que ustedes creen?
